Ingredients
- 2 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon orange zest
- 1/2 cup orange juice
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup fresh cranberries
- 1/2 cup walnuts (optional)
Instructions
1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan.
2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk until well blended.
3. In a separate bowl, whisk together the orange zest, orange juice, eggs, and vegetable oil until smooth.
4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
5. Fold in the fresh cranberries and walnuts (if using) until evenly distributed.
6. Pour the batter into the prepared loaf pan and smooth the top. Bake for 30–40 minutes, or until a toothpick inserted comes out clean.
7. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
