Ingredients
- 4 boneless, skinless chicken breasts (about 1 1/2 pound)
- 1 cup orzo pasta
- 8 ounce Boursin cheese (garlic & herb)
- 2 cup fresh spinach
- 2 cup low-sodium chicken broth
- 2 tablespoon olive oil
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
1. Season the chicken breasts with salt, pepper, and dried oregano.
2. In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for 5-6 minutes per side until golden brown and cooked through. Remove from skillet.
3. Add minced garlic to the skillet and cook until fragrant, about 1 minute.
4. Add orzo and chicken broth to the skillet. Bring to a simmer and cook for 8-10 minutes, stirring occasionally, until orzo is tender.
5. Stir in Boursin cheese until melted and creamy. Add fresh spinach and let it wilt.
6. Slice the cooked chicken and place on top of the creamy orzo. Spoon sauce over chicken and serve warm.
Notes
This dish can be made vegetarian by omitting the chicken and adding your favorite vegetables. It is also suitable for meal prep and can be stored in airtight containers for up to 3-4 days.
