Description
Indulge in this creamy, cheesy, and savory Creamy Cheesesteak Tortellini that combines tender ribeye steak, sautéed veggies, and a smooth provolone sauce over cheese tortellini. Perfect for a cozy weeknight dinner!
Ingredients
Scale
- 1 lb cheese tortellini (fresh or frozen)
- 1 lb ribeye steak, thinly sliced
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 1 small green bell pepper, thinly sliced
- 1 clove garlic, minced
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
For the Creamy Provolone Sauce:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 ½ cups whole milk
- 1 cup shredded provolone cheese
- ½ cup shredded mozzarella cheese
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the Tortellini: Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package instructions. Drain and set aside.
- Cook the Steak & Veggies: Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced ribeye steak, season with salt and pepper, and cook for 2-3 minutes until browned. Remove and set aside. In the same skillet, add the sliced onion, green bell pepper, and minced garlic. Sauté until softened, about 3-4 minutes. Stir in Worcestershire sauce. Return the steak to the skillet and mix well.
- Make the Creamy Provolone Sauce: In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute to remove the raw flour taste. Gradually whisk in the milk, stirring constantly until thickened. Reduce heat and add the shredded provolone and mozzarella cheese, stirring until smooth. Season with onion powder, garlic powder, salt, and pepper.
- Combine Everything: Add the cooked tortellini and cheesesteak mixture to the sauce, stirring to coat everything evenly. Let it simmer for 2 minutes to blend the flavors.
- Serve: Garnish with extra shredded provolone if desired. Serve hot and enjoy!
Notes
- Feel free to use different types of cheese, like cheddar or gouda, for a twist.
- To make this recipe spicier, add some sliced jalapeños or crushed red pepper flakes.
- If you don’t have ribeye steak, you can substitute with flank steak or sirloin.
