Ingredients
- 8 ounce bow-tie pasta
- 2 pound boneless, skinless chicken thighs or breasts
- 1 cup corn kernels (fresh, frozen, or canned)
- 6 ounce bacon, chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon smoked paprika
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoon olive oil
Instructions
1. Cook the bow-tie pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
2. Season the chicken with smoked paprika, Italian seasoning, salt, and black pepper.
3. Heat olive oil in a skillet over medium-high heat and cook the seasoned chicken until fully cooked. Remove from skillet and set aside.
4. In the same skillet, add more olive oil and corn kernels. Sauté with smoked paprika and chili powder until slightly toasted.
5. In the skillet with the remaining corn, pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted.
6. Return the cooked chicken to the skillet, add the cooked pasta, and toss everything together until well coated in the sauce.
7. Stir in reserved corn and top with crispy bacon before serving.
Notes
Serve hot with fresh herbs for garnish. Pairs well with a green salad or garlic bread.
