Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 8 ounce mushrooms, sliced
- 4 cup fresh spinach, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F.
2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and finely chopped onion, and sauté until fragrant and translucent.
3. Add the sliced mushrooms to the skillet and sauté until they soften and release their moisture.
4. Stir in the chopped spinach and cook until it just begins to wilt. Season with salt, pepper, dried thyme, and paprika.
5. In a baking dish, arrange the chicken breasts in a single layer. Pour the sautéed spinach-mushroom mixture over the top and sprinkle with grated Parmesan cheese.
6. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is golden and bubbly.
7. Let it rest for a few minutes before serving.
