Get ready to indulge in a bowl of pure comfort and flavor with our Creamy Chorizo Potato Soup. This hearty and satisfying soup is the perfect way to warm up on a chilly day. Made with savory chorizo sausage, tender potatoes, and a creamy broth, this dish is sure to become a new family favorite.
Ingredients
- 1 pound chorizo, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 1/2 pound potatoes, peeled and diced
- 4 cup chicken or vegetable broth
- 1 cup heavy cream
- 1 cup milk
- 2 cup kale or spinach, chopped
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoon olive oil
- Fresh parsley or cilantro, for garnish
Instructions
1. In a large pot, heat the olive oil over medium heat. Add the chorizo and cook until it’s nicely browned, breaking it up with a wooden spoon as it cooks. Once the chorizo is cooked, remove it from the pot and set it aside.
2. In the same pot, add the diced onion and minced garlic. Sauté them until they’re softened and fragrant, about 3-5 minutes.
3. Stir in the diced potatoes, smoked paprika, salt, and pepper. Pour in the broth and bring the mixture to a boil. Reduce the heat and let the soup simmer for 15-20 minutes, or until the potatoes are tender.
4. Using an immersion blender, partially blend the soup to create a creamy texture, leaving some chunks of potato if desired.
5. Stir in the heavy cream, milk, and the cooked chorizo. Add the chopped kale or spinach and let the soup simmer for another 5-7 minutes, until the greens are wilted and the soup is heated through.
6. Ladle the Creamy Chorizo Potato Soup into bowls, garnish with fresh parsley or cilantro, and serve with crusty bread if desired.
Notes
The beauty of this Creamy Chorizo Potato Soup is its versatility. You can easily customize it to suit your taste preferences:
Add More Spice: Sprinkle in some cumin, coriander, or chili flakes to amp up the heat.
Swap Greens: Instead of kale or spinach, try using Swiss chard or collard greens for a different texture and flavor profile.
Alternate Proteins: Swap the chorizo for chicken sausage or ground turkey for a leaner option.
Dairy-Free Substitutions: Use coconut milk or cashew cream instead of heavy cream and milk for a vegan version.
Garnish Ideas: Top the soup with avocado, croutons, or shredded cheese for added texture and flavor.
