Ingredients
- 4 pieces chicken thighs, bone-in and skin-on
- 2 tablespoon olive oil
- 8 ounce mushrooms, sliced (such as cremini or button mushrooms)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon Dijon mustard
- 1 teaspoon dried thyme
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Start by generously seasoning the chicken thighs with salt and pepper on both sides.
2. In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, place the seasoned chicken thighs skin-side down in the skillet. Sear for about 5–7 minutes, or until the skin becomes golden brown and crispy. Flip the chicken thighs and cook for another 5 minutes. Remove the chicken from the skillet and set it aside.
3. In the same skillet, add the sliced mushrooms. Cook for about 5 minutes, stirring occasionally, until the mushrooms are browned and softened. Then, add the minced garlic and sauté for an additional minute.
4. Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Let the mixture simmer for about 2 minutes. Next, stir in the heavy cream, Dijon mustard, and dried thyme. Allow the sauce to simmer for 3–4 minutes, until it thickens slightly.
5. Place the seared chicken thighs back into the skillet, spooning some of the creamy mushroom sauce over the top. Reduce the heat, cover the skillet, and cook for an additional 10–15 minutes, or until the internal temperature of the chicken reaches 165°F.
6. Once the chicken is cooked through, stir in the grated Parmesan cheese until it melts into the sauce. Taste and adjust seasoning if needed.
7. Garnish with freshly chopped parsley and serve hot.
