  • 1 pound cheese tortellini
  • 1 cup baby spinach leaves
  • 1 cup grated Parmesan cheese

  • Red pepper flakes, optional

Instructions

1. In a large skillet over medium heat, heat the olive oil and brown the sausage, breaking it into small pieces. Cook for 5-7 minutes until no longer pink. Remove the sausage from the skillet and set it aside.

2. In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Then, add the minced garlic and sauté for 1 minute, ensuring the garlic doesn’t burn.

4. Add the tortellini to the skillet and cook according to the package instructions, usually about 5-7 minutes, stirring occasionally.
