Ingredients

  • 2 lbs baby potatoes

  • 2 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 4 tbsp butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 2 tbsp chopped fresh parsley


Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Toss the baby potatoes with olive oil, salt, and black pepper in a bowl. Spread them on a baking sheet.

  3. Roast the potatoes for 25–30 minutes, or until tender and golden brown, turning once halfway through.

  4. Melt the butter in a large skillet over medium heat.

  5. Add the minced garlic and cook for about 1 minute, just until fragrant—don’t let it burn!

  6. Pour in the heavy cream, add Parmesan cheese and Italian seasoning. Stir well.

  7. Simmer the sauce for 3–4 minutes, until it thickens slightly.

  8. Add the roasted potatoes to the sauce and gently toss to coat them evenly.

  9. Garnish with fresh chopped parsley and serve warm.

  • For extra flavor, add a pinch of crushed red pepper or smoked paprika to the sauce.
