Ingredients
- 2 medium sweet potatoes
- 2 cup fresh spinach
- 8 ounce cremini or shiitake mushrooms
- 4 ounce cream cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Preheat the Oven: Set your oven to 400°F. Wash the sweet potatoes and pierce them with a fork several times.
2. Bake the Sweet Potatoes: Place the sweet potatoes directly on the oven rack and bake for 45-60 minutes until tender.
3. Sauté the Vegetables: In a skillet, heat the olive oil over medium heat. Add minced garlic and sliced mushrooms, cooking until soft. Stir in spinach until wilted.
4. Prepare the Creamy Filling: Reduce heat to low, add cream cheese and Parmesan to the vegetables, stirring until melted and smooth. Season with salt and pepper.
5. Assemble the Stuffed Potatoes: Slice baked sweet potatoes open, scoop out some flesh, mix with filling, and spoon back into skins.
6. Serve and Enjoy: Arrange stuffed sweet potatoes on a platter and enjoy hot!
