Ingredients
1 lb boneless, skinless chicken breasts, cubed
2 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
8 oz sliced mushrooms
1 cup long-grain white rice
2 cups chicken broth
1/2 cup heavy cream (or a non-dairy alternative)
1/2 cup grated Parmesan cheese
1 tsp dried thyme
Salt and pepper to taste
Fresh parsley (optional, for garnish)
Instructions
1. Heat olive oil in a large skillet over medium heat. Add cubed chicken, season with salt and pepper, and sear until browned, about 5-7 minutes. Remove and set aside.
2. Add diced onion to the skillet and cook until softened, about 3-4 minutes.
3. Add garlic and sliced mushrooms, cooking for 2-3 minutes until mushrooms release moisture.
4. Add rice and stir to coat with the mixture. Pour in chicken broth and bring to a simmer.
5. Cover, reduce heat to low, and cook for 18-20 minutes until rice is tender and liquid is absorbed.
6. Stir in heavy cream, Parmesan, and thyme. Return chicken to the skillet and simmer 5 minutes until heated through.
7. Garnish with fresh parsley and serve.
