Description

When the weather turns chilly and you’re craving something warm and nourishing, nothing hits the spot quite like a bowlful of Creamy Mushroom Soup. This classic, comforting soup is packed with earthy mushroom flavor and a luxuriously creamy texture that’s sure to satisfy.

Ingredients

Scale
  • 2 tablespoons butter
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 1 lb mushrooms (such as cremini, button, or portobello), sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or half-and-half for a lighter version
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: a splash of white wine or sherry for extra depth of flavor

Instructions

1. In a large pot, melt the butter with the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 3-4 minutes.

2. Next, add the sliced mushrooms to the pot and sauté until they release their moisture and begin to brown, about 8-10 minutes. Stir in the minced garlic and thyme, cooking for another minute until fragrant.

3. If you’d like to add a touch of extra depth, pour in a splash of white wine or sherry, scraping the bottom of the pot to deglaze and cook until the alcohol evaporates, about 2 minutes.

4. Pour in the vegetable or chicken broth, stir well, and bring the soup to a gentle boil. Reduce the heat and simmer for 10 minutes.

5. In a small bowl, whisk the flour into the heavy cream (if using for thickening). Slowly stir the cream mixture into the soup and let it simmer for another 5 minutes, stirring frequently until the soup thickens to your desired consistency.

6. Taste the Creamy Mushroom Soup and season with salt and pepper as needed.

7. Ladle the hot soup into bowls, garnish with freshly chopped parsley, and enjoy with crusty bread or crackers for a comforting and satisfying meal.

Notes

Mushrooms are a fantastic source of antioxidants, vitamins, and minerals, while the cream or half-and-half adds a creamy richness and a boost of healthy fats.

You can also experiment with different herbs, like rosemary or sage, or add a splash of sherry or white wine for extra depth.
