Ingredients
- 1 pound Italian sausage (mild or spicy)
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups fresh spinach
- 1 cup uncooked pasta
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add Italian sausage and cook until browned, breaking it up as it cooks.
3. Drain excess grease if necessary.
4. Add diced onion and cook until softened, about 4 minutes.
5. Stir in minced garlic and crushed red pepper flakes, cooking for 1 minute.
6. Pour in chicken broth and bring to a simmer.
7. Stir in diced tomatoes, heavy cream, and Italian seasoning.
8. Add uncooked pasta and simmer for 8-10 minutes until tender, stirring occasionally.
9. Reduce heat to low, stir in spinach and Parmesan cheese, simmer for 2 minutes until spinach wilts and cheese melts.
10. Adjust salt and pepper to taste and serve hot.
Notes
For a vegetarian version, substitute sausage with crumbled tofu or mushrooms.
Consider using a combination of chicken and beef broth for richer flavor.
