Ingredients
- 1 pound Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cup chicken broth
- 1 can (14.5 ounce) diced tomatoes
- 9 ounce cheese tortellini
- 2 cup fresh spinach
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and crumbled. Remove the sausage from the pot and set aside.
2. In the same pot, sauté the diced onion and minced garlic until fragrant and translucent, about 5 minutes.
3. Pour in the chicken broth and diced tomatoes, and bring to a simmer.
4. Add the cheese tortellini to the simmering broth and cook according to package instructions, about 7-9 minutes, until tender.
5. Return the cooked sausage to the pot, stir in the fresh spinach and heavy cream, and simmer until the spinach is wilted, about 5 minutes. Season with salt and pepper to taste.
6. Ladle into bowls and serve hot.
