  • 10 oz fresh spinach

  • 8 oz mushrooms, sliced

  • 2 cups ricotta cheese

  • 2 cups mozzarella cheese, shredded

  • 1 cup Parmesan cheese, grated

  • 3 cups Alfredo sauce

  • 2 tbsp olive oil

  • 1 clove garlic, minced

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Sauté Vegetables: Heat olive oil in a pan over medium heat. Add garlic and mushrooms, cooking until tender. Stir in spinach, season with salt and pepper, and cook until wilted. Remove from heat.

  2. Prepare Ricotta Mixture: In a bowl, mix ricotta cheese with half of the Parmesan and a pinch of salt and pepper.

  3. Assemble Lasagna: Spread a layer of Alfredo sauce in a baking dish. Add a layer of lasagna noodles, followed by ricotta mixture, sautéed vegetables, mozzarella cheese, and more sauce. Repeat layers, finishing with mozzarella and Parmesan on top.

  4. Bake: Cover with foil and bake at 375°F (190°C) for 30 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.

  5. Serve: Let rest for 10 minutes before slicing. Garnish with fresh parsley and enjoy!
