Ingredients
- 1 pound cheese tortellini
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 4 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cup baby spinach
- 1 cup heavy cream
- 1 tablespoon Italian seasoning
- 1/2 cup Parmesan cheese, grated
- Salt to taste
- Pepper to taste
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
2. Pour in the chicken broth and stir in the chopped sun-dried tomatoes. Bring the mixture to a simmer.
3. Add the cheese tortellini to the pot and cook according to the package instructions, usually 5-7 minutes, until tender.
4. Stir in the heavy cream and baby spinach. Allow the spinach to wilt for about 2-3 minutes.
5. Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
6. Ladle into bowls and serve hot.
Notes
For a thicker soup, increase the amount of heavy cream. For a lighter consistency, reduce the cream or add more broth.
