  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach
  • 1/2 cup dried cranberries
  • 4 ounce brie cheese
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a skillet over medium heat. Sauté onion until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
  3. Add fresh spinach, dried cranberries, and dried thyme to the skillet. Cook for 1-2 minutes until spinach wilts. Season with salt and black pepper to taste, then remove from heat and let cool slightly.
  4. Butterfly the chicken breasts by slicing them horizontally, almost all the way through, and open them like a book.
  5. Season the chicken with salt, black pepper, and paprika.
  6. Evenly distribute the filling among the chicken breasts and place a slice of brie cheese on top of the filling in each breast. Secure with toothpicks or kitchen twine.
  7. In an oven-safe skillet, heat remaining olive oil over medium-high heat. Sear stuffed chicken breasts for 3-4 minutes per side until golden-brown.
  8. Transfer skillet to preheated oven and cover with foil. Bake for 25-30 minutes or until internal temperature reaches 165°F.
  9. Remove toothpicks or twine before serving.
