- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach
- 1/2 cup dried cranberries
- 4 ounce brie cheese
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a skillet over medium heat. Sauté onion until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
- Add fresh spinach, dried cranberries, and dried thyme to the skillet. Cook for 1-2 minutes until spinach wilts. Season with salt and black pepper to taste, then remove from heat and let cool slightly.
- Butterfly the chicken breasts by slicing them horizontally, almost all the way through, and open them like a book.
- Season the chicken with salt, black pepper, and paprika.
- Evenly distribute the filling among the chicken breasts and place a slice of brie cheese on top of the filling in each breast. Secure with toothpicks or kitchen twine.
- In an oven-safe skillet, heat remaining olive oil over medium-high heat. Sear stuffed chicken breasts for 3-4 minutes per side until golden-brown.
- Transfer skillet to preheated oven and cover with foil. Bake for 25-30 minutes or until internal temperature reaches 165°F.
- Remove toothpicks or twine before serving.
