Ingredients
- 2 pound russet potatoes
- 1/4 cup butter
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 cup potato starch
- 1/4 cup cornstarch
- 1/4 cup rice flour
- 1/4 cup water
Instructions
1. Grate the peeled russet potatoes and soak them in ice water for 20 minutes.
2. Drain the potatoes and squeeze out excess moisture using a clean kitchen towel.
3. In a non-stick pan over medium heat, melt the butter and add the shredded potatoes, cooking for about 15 minutes until lightly golden brown.
4. Transfer the cooked potatoes to a bowl and let them cool slightly. Add salt, garlic powder, potato starch, cornstarch, and rice flour, kneading until a thick dough forms. If too dry, add a splash of water.
5. Shape into rectangular patties and refrigerate for at least 2 hours.
6. Heat oil in a pan to 350°F. Fry patties for 2-3 minutes per side until golden brown and crispy. Drain on a wire rack.
Notes
Serve alongside eggs, bacon, or sausage. Top with cheese, chives, or sour cream for extra flavor.
