Description
Crockpot Chicken Piccata is a slow-cooked masterpiece that combines tender chicken breasts, tangy lemon juice, briny capers, and a rich sauce.
Ingredients
- 2 pound boneless, skinless chicken breasts
- 1/4 cup minced garlic
- 1 cup low-sodium chicken broth
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup caper berries
- 2 tablespoon olive oil
- 2 teaspoon Italian seasoning
- 1/4 cup fresh parsley, chopped
- 2 tablespoon butter
- 8 ounce cooked pasta (optional)
Instructions
1. Season the chicken breasts with salt, pepper, and Italian seasoning.
2. Place the seasoned chicken in the crockpot, then add the minced garlic, chicken broth, lemon juice, caper berries, and olive oil. Gently stir to combine.
3. Cover the crockpot and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is tender and cooked through.
4. Remove the cooked chicken from the crockpot. Whisk the butter into the cooking liquid to create a smooth, flavorful sauce.
5. Place the chicken over a bed of cooked pasta or rice, spoon the sauce over the top, and garnish with fresh chopped parsley.
Notes
Opt for boneless, skinless chicken breasts for the best texture and ease of preparation.
If using bone-in or skin-on chicken, you may need to adjust the cooking time accordingly.
Feel free to experiment with additional ingredients to enhance the flavor profile.
