Ingredients

Scale
  • 2 lbs ground beef
  • 1 cup crushed Ritz crackers (or breadcrumbs)
  • 1 packet (1 oz) French onion soup mix
  • 1/2 cup caramelized onions
  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 8 slices Swiss cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Meatloaf Mixture: In a large mixing bowl, combine ground beef, crushed crackers, French onion soup mix, caramelized onions, eggs, milk, Worcestershire sauce, garlic powder, and black pepper. Mix until just combined—do not overmix.
  • Shape the Meatloaf: Form the meat mixture into a loaf shape and place it in the crockpot.
  • Slow Cook: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, or until the meatloaf reaches an internal temperature of 160°F (70°C).
  • Melt the Swiss Cheese: In the last 10 minutes of cooking, place Swiss cheese slices over the top of the meatloaf, cover, and let the cheese melt.
  • Serve: Slice the meatloaf, garnish with fresh parsley, and serve with mashed potatoes or roasted vegetables for a delicious meal. Enjoy!

Notes

  • Feel free to add extra seasonings or herbs to customize the flavor to your liking.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated easily.
