Description

Easy Cheesy Meatball Subs are a comforting and delicious sandwich filled with tender meatballs, tangy marinara sauce, and melted cheese, perfect for satisfying cravings.


Ingredients

  • 1 pound ground beef (or a mix of beef and pork)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 1/2 cup marinara sauce
  • 4–6 hoagie rolls or sub buns
  • 2 cup shredded mozzarella cheese
  • 1/2 cup shredded provolone cheese (optional)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

1. Preheat your oven to 400°F. In a large bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, Italian seasoning, salt, and pepper. Mix until just combined.

2. Roll the mixture into 1-1.5 inch meatballs and place them on a parchment-lined baking sheet. You can also pan-fry the meatballs in a skillet over medium heat.

3. In a large saucepan, heat the marinara sauce over medium heat until it simmers. Gently add the cooked meatballs to the sauce and let them simmer for 10-15 minutes.

4. Split the hoagie rolls open and brush with melted butter if desired. Toast them in the oven for 3-5 minutes until lightly crisp.

5. Spoon the meatballs and sauce into the prepared rolls. Top with shredded mozzarella and provolone cheeses, then place under the broiler for 2-3 minutes until cheese is melted and bubbly.

6. Sprinkle with fresh chopped parsley or basil before serving.

Notes

These subs can be made ahead of time. Prepare meatballs and sauce, cool, and store in an airtight container for up to 2 days. Reheat before serving.
