Ingredients
- 1 pound kielbasa sausage
- 2 tablespoon olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 24 ounce marinara sauce
- 2 cup chicken broth
- 8 ounce penne or rotini pasta
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/4 cup fresh parsley or basil, chopped
Instructions
1. In a large pot or deep skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook for 4-5 minutes, or until nicely browned on the edges. Remove the kielbasa from the pot and set it aside.
2. In the same pot, sauté the diced onion and bell pepper until they’re softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.
3. Pour in the marinara sauce and chicken broth. Season with salt, pepper, and the optional Italian seasoning. Stir everything together and bring the mixture to a gentle simmer.
4. Stir in the uncooked pasta and return the browned kielbasa to the pot. Make sure the pasta is fully submerged in the liquid.
5. Cover the pot, reduce the heat to medium-low, and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
6. Remove the pot from the heat and stir in the shredded mozzarella and grated Parmesan cheese until melted and creamy.
