Ingredients
- Rotini pasta
- Crisp English cucumber
- Sweet grape tomatoes
- Crunchy bell peppers
- Sliced black olives
- Diced red onion
- Crumbled feta cheese
- Italian dressing
Instructions
1. 1. Bring a large pot of salted water to a boil and cook the rotini according to package instructions until al dente. Drain and rinse under cold water.
2. 2. Chop the English cucumber, halve the grape tomatoes, dice the bell pepper, and slice the black olives and red onion.
3. 3. In a large bowl, combine the cooked and cooled pasta with the chopped vegetables. Pour the Italian dressing over and toss gently.
4. 4. Stir in crumbled feta cheese and chopped fresh parsley. Season with salt and black pepper to taste.
5. 5. Cover and refrigerate for at least 30 minutes before serving.
Notes
