Ingredients

  • ½ cup of crumbled feta cheese
  • â…“ cup of dried cranberries
  • ¼ cup of finely chopped red onion
  • ¼ cup of fresh, chopped parsley

Instructions

1. In a small bowl or jar, combine ¼ cup of extra virgin olive oil, 2 tablespoons of fresh lemon juice, 1 teaspoon of Dijon mustard, 1 teaspoon of honey (or maple syrup), 1 minced garlic clove, ½ teaspoon of salt, and ¼ teaspoon of black pepper.

2. Whisk or shake the ingredients together until they are well combined and emulsified.

3. In a large bowl, combine the drained and rinsed chickpeas, crumbled feta cheese, dried cranberries, finely chopped red onion, and fresh chopped parsley. Gently toss the ingredients together until they are evenly distributed.
