  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 medium zucchini, sliced
  • 1 cup bell peppers, sliced (red and yellow)
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 tablespoon sweet paprika
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth or white wine
  • chopped parsley or basil for garnish

Instructions

1. Season the chicken with sweet paprika, smoked paprika, onion powder, garlic powder, salt, and pepper on both sides. Toss zucchini, bell peppers, and onion with 1 tablespoon of olive oil in a large bowl.

2. In a large skillet over medium-high heat, add the remaining 1 tablespoon of olive oil. Sear the seasoned chicken for 3-4 minutes per side until golden brown. Remove the chicken from the pan and set it aside.

3. In the same skillet, sauté the onion and garlic for 2 minutes, then add zucchini and bell peppers. Cook for about 5 minutes until vegetables start to soften.

4. Pour in the chicken broth or white wine to deglaze the pan. Return the seared chicken to the skillet among the vegetables. Cover, reduce heat to medium-low, and cook for 8-10 minutes until chicken is cooked through.

5. Remove the lid, increase heat to medium, and cook for 1-2 more minutes for browning. Garnish with chopped parsley or basil before serving.

Notes

This dish can be served with rice, couscous, or crusty bread to soak up the juices. You can also customize it by adding other vegetables or using different proteins like turkey or tofu.
