Ingredients
- 1 English cucumber
- 2 cups medium pasta (penne or rotini)
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon sugar
- 2 tablespoons vinegar
- 1 tablespoon fresh dill
- Salt and pepper to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
2. Thinly slice the English cucumber and sweet white onion. Set aside.
3. In a large mixing bowl, whisk together sour cream, mayonnaise, sugar, salt, vinegar, fresh dill, and pepper until smooth.
4. Add the cooked pasta, cucumbers, and onions to the dressing. Toss gently until evenly coated.
5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
Notes
For a Mediterranean twist, add cherry tomatoes, olives, and feta cheese.
For a vegan version, substitute sour cream and mayonnaise with plant-based alternatives.
