Description

Frosted Zucchini Bars are a delightful way to enjoy the abundance of summer zucchini while indulging in a decadent cream cheese frosting.


Ingredients

  • 2 cup all-purpose flour
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable oil
  • 1 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cup shredded zucchini (about 2 medium)
  • 1 cup chopped walnuts or pecans (optional)
  • 8 ounce cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoon milk or cream

Instructions

1. Preheat your oven to 350°F and grease a 9×13-inch baking pan.

2. In a bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.

3. In a large bowl, beat the butter, oil, and sugar until light and fluffy. Add the eggs and vanilla, then beat well.

4. Stir in the shredded zucchini (and nuts if using).

5. Gradually mix the dry ingredients into the wet ingredients until well blended. Pour the batter into the prepared pan and bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let the bars cool completely.

6. In a bowl, beat the cream cheese and butter until smooth. Add the powdered sugar, vanilla, and milk or cream, then beat until the frosting is light and fluffy.

7. Spread the cream cheese frosting evenly over the cooled zucchini bars.

Notes

For a moister texture, you can substitute whole wheat flour for up to half of the all-purpose flour.

Store any leftover bars in an airtight container in the refrigerator for up to 5 days.

If you prefer to omit the nuts, the bars will still be delicious without them.
