  • 56 g (¼ cups) butter, salted or unsalted
  • 2 eggs (room temperature)
  • 100 g (¾ cups) caster sugar
  • 90 g (½ cups) demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g (½ cups) dark or milk chocolate chips

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper for easy removal.
  • Prepare the Brownie Batter: In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside. In a heatproof bowl, melt the chopped dark chocolate and butter together over a double boiler or in the microwave, stirring until smooth.
  • Combine Wet Ingredients: Remove from heat and let cool slightly. Stir in the caster sugar, demerara sugar, and vanilla extract until well combined. Add the eggs, one at a time, mixing well after each addition.
  • Mix in Dry Ingredients: Gradually fold in the dry ingredients until just combined. Be careful not to overmix. Gently fold in the chocolate chips.
  • Prepare the Cookie Batter: In a separate bowl, prepare your favorite cookie dough recipe or use pre-made cookie dough.
  • Layer the Batters: Spread the brownie batter evenly in the bottom of the prepared baking pan. Drop spoonfuls of the cookie dough on top of the brownie batter, spreading it gently to cover as much as possible.
  • Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
