Ingredients

Scale
  • 1 pound ground beef
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoon chopped parsley
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for searing)
  • 4 tablespoon unsalted butter
  • 5 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley
  • Salt to taste
  • 12 ounce linguine
  • 1 tablespoon butter
  • 3/4 cup heavy cream
  • 3/4 cup grated Parmesan
  • Salt & pepper to taste

Instructions

Step 1: Make the Meatballs

In a large bowl, combine the ground meat, egg, breadcrumbs, Parmesan, parsley, garlic, salt, and pepper. Mix until just combined – don’t overwork the mixture. Form the mixture into 1-inch meatballs (about 20-24 total). Set aside.

Step 2: Sear the Meatballs

Heat the olive oil in a large skillet over medium heat. Add the meatballs in batches and brown them on all sides, about 6-8 minutes total. Remove the meatballs and set them aside.

Step 3: Cook the Garlic Butter Sauce

In the same skillet, reduce the heat to low. Add the butter, garlic, and red pepper flakes (if using). Cook for 1-2 minutes until fragrant. Stir in the lemon juice and parsley. Return the meatballs to the skillet and spoon the sauce over them. Simmer on low for 5-7 minutes until the meatballs are cooked through.

Step 4: Make the Pasta

While the meatballs are simmering, cook the linguine according to the package directions. Reserve 1/2 cup of the pasta water. In a saucepan, melt the butter. Add the heavy cream and bring to a gentle simmer. Stir in the Parmesan until melted. Thin the sauce with the pasta water if needed. Season with salt and pepper. Toss the cooked linguine in the sauce until it’s evenly coated.

Step 5: Plate and Serve

Serve the Garlic Butter Meatballs over a bed of the Creamy Linguine. Drizzle any extra garlic butter from the pan over the top. Garnish with additional parsley and Parmesan cheese for a truly impressive presentation.

Notes

To make this dish healthier, you can use lean ground turkey or chicken in place of beef, opt for whole-wheat or gluten-free pasta, and reduce the amount of butter and cream in the sauce by substituting with low-fat milk or vegetable broth. Adding more vegetables, such as spinach or zucchini, can also boost the nutritional value without sacrificing flavor.
