- 1 1/2 pound sirloin steak, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 4 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat the oven to 425°F.
- In a large bowl, toss the halved baby potatoes with 2 tablespoon of melted butter, salt, and black pepper. Spread the seasoned potatoes onto a baking sheet.
- Roast the potatoes in the preheated oven for 20 minutes, or until they’re slightly tender.
- In a skillet over medium-high heat, melt the remaining 2 tablespoon of butter. Add the minced garlic, thyme, and rosemary. Sauté for 1 minute, then add the steak pieces and cook until browned.
- Pour the steak mixture over the roasted potatoes on the baking sheet. Toss everything together and bake for an additional 15 minutes.
- Remove the dish from the oven, sprinkle with fresh chopped parsley, and serve hot.
Notes
Consider serving alongside a fresh green salad or roasted vegetables. A bold red wine or refreshing iced tea pairs beautifully with this dish.
