Instructions
1. Bring a large pot of salted water to a boil. Add pasta shells and cook until al dente according to package directions. Reserve ¼ cup pasta water, then drain and set aside.
2. Pat steak cubes dry, then season with salt and pepper. Heat olive oil in a large skillet over high heat. Add steak in a single layer and sear for 1–2 minutes per side until browned. Reduce heat to medium, add butter and minced garlic, and cook 30 seconds more, tossing to coat. Transfer steak bites and juices to a plate; keep warm.
3. In the same skillet over medium heat, add butter and garlic for the sauce. Cook 30 seconds, then pour in heavy cream and Italian seasoning. Simmer for 2 minutes, stirring. Add Parmesan cheese and stir until melted and smooth.
4. Add cooked shells to the sauce, tossing to coat. If sauce is too thick, stir in reserved pasta water a splash at a time until creamy. Season with additional salt and pepper if needed.
