Instructions
1. In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy, about 2-3 minutes.
2. Beat in the molasses and egg until well combined.
3. In a separate bowl, whisk together the flour, baking soda, salt, and spices.
4. Gradually add the dry ingredients to the wet mixture, mixing just until a cohesive dough forms. Wrap the dough in plastic and refrigerate for at least 1 hour.
5. Preheat your oven to 350°F. On a lightly floured surface, roll the dough out to a ¼-inch thickness and use cookie cutters to shape the cookies.
6. Arrange the shaped cookies on a parchment-lined baking sheet and bake for 8-10 minutes. Allow to cool completely before decorating.

Store cookies in an airtight container at room temperature for up to 1 week. For longer-term storage, freeze undecorated cookies for up to 3 months.
