Ingredients
- 1 pound ground beef
- 2 medium bell peppers, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 ounce) diced tomatoes, undrained
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 1 cup shredded cheese
Instructions
1. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat if needed.
2. Stir in the onion, garlic, and bell peppers. Cook for 4-5 minutes, or until the vegetables have softened and become fragrant.
3. Pour in the diced tomatoes with their juice, and season with chili powder, cumin, paprika, salt, and black pepper. Stir together and let simmer for 8-10 minutes.
4. Sprinkle the shredded cheese over the top of the skillet. Cover and let the cheese melt for 2-3 minutes.
Notes
Serve over rice, in tortillas, or with crusty bread for dipping.
