- 2 medium sweet potatoes, peeled and cubed
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 2 teaspoon dried rosemary, crushed
- 1 pound lean ground turkey
- 1 medium yellow onion, diced
- 1 can (14.5 ounce) vegetable broth (about 2 cup)
- 1 3/4 cup whole milk
- 1 cup basmati rice
- 2 cup shredded cheddar cheese
- 2 teaspoon chopped parsley
Instructions
- Preheat your oven to 400°F. Peel and cube the sweet potatoes into 1-inch chunks. Place them in a 9×13 inch casserole dish, drizzle with olive oil, and sprinkle with salt, pepper, garlic powder, and rosemary. Toss the sweet potatoes to coat them evenly.
- Bake the sweet potatoes uncovered for 30 minutes, allowing them to develop a nice caramelization.
- While the sweet potatoes are roasting, brown the ground turkey in a large skillet over medium-high heat. Once the turkey is cooked through, add the diced onion and sauté for 3 to 5 minutes, or until the onion is softened.
- Remove the casserole dish from the oven after the sweet potatoes have roasted for 30 minutes. Add the cooked turkey and onion mixture, vegetable broth, milk, and uncooked rice to the dish. Stir everything together until well combined.
- Return the casserole to the oven and bake uncovered for an additional 15 minutes.
- Sprinkle the shredded cheddar cheese over the top of the casserole and bake for another 10 minutes, or until the cheese is melted and bubbly.
- Remove the Ground Turkey Sweet Potato Bake from the oven and let it rest for 10 to 15 minutes before serving. Garnish with chopped parsley, and enjoy this delightful and nourishing dish!
Notes
For best results, choose sweet potatoes that are firm and free of blemishes. Look for a deep orange color for higher levels of beta-carotene. When browning the ground turkey, break it up into small crumbles for even cooking.
