Ingredients
- 1 pound ground turkey
- 2 medium sweet potatoes, diced
- 1 medium yellow onion, diced
- 1 medium bell pepper, diced
- 2 tablespoon extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon red chili flakes (optional)
- 1 cup shredded mozzarella cheese (optional)
- 1/4 cup fresh parsley, chopped
Instructions
1. In a large skillet, heat the olive oil over medium-high heat. Add the ground turkey and break it up as it cooks, stirring occasionally, for about 5 minutes until no longer pink. Then, add the diced onion and bell pepper, and continue cooking until the onion is soft and translucent.
2. Once the turkey and vegetables are sautéed, add the diced sweet potatoes, red chili flakes (if using), salt, and pepper. Cover the skillet and cook, stirring occasionally, until the sweet potatoes are tender – about 15-20 minutes. If the sweet potatoes seem to be drying out, add a splash of water or a drizzle of olive oil to help them cook through.
3. When the sweet potatoes are fork-tender, sprinkle the shredded mozzarella cheese over the top (if using). Cover the skillet and let the cheese melt for a minute or two. Finally, remove the skillet from the heat and garnish with freshly chopped parsley.
