  • Author: Emily Bennett
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

Hawaiian Fried Rice is a vibrant, flavorful dish that combines savory ham, sweet pineapple, and colorful vegetables, all stir-fried to perfection with a delightful sweet and sour sauce.

Ingredients

Scale
  • 2 cup cooked rice
  • ½ pound diced ham
  • 1 cup pineapple chunks
  • ½ cup peas
  • ½ cup diced carrots
  • ¼ cup sliced green onions
  • 2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 lightly beaten eggs
  • Salt and pepper, to taste
  • ½ cup pineapple juice
  • ¼ cup ketchup
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch dissolved in 2 teaspoon water

Instructions

1. Heat a large skillet or wok over medium-high heat and add the sesame oil.

2. Toss the diced ham, carrots, and peas into the hot pan and stir-fry for 2-3 minutes, until the vegetables begin to soften.

3. Push the ham and veggies to one side of the pan, then pour in the beaten eggs. Scramble the eggs until they’re cooked through, then mix them in with the rest of the ingredients.

4. Stir in the cooked rice, pineapple chunks, and sliced green onions. Drizzle in the soy sauce and continue stir-frying for 5-7 minutes, seasoning with salt and pepper to taste.

5. In a small saucepan, combine the pineapple juice, ketchup, soy sauce, rice vinegar, and brown sugar. Bring the mixture to a simmer, then stir in the cornstarch-water mixture until the sauce thickens.

6. Plate your freshly made Hawaiian Fried Rice and drizzle the sweet and sour sauce over the top, or serve the sauce on the side for dipping.

Notes

Using day-old, chilled rice is key for achieving the optimal texture. The drier, firmer grains will prevent the fried rice from becoming mushy.

Make sure to keep the skillet or wok at medium-high heat and stir the ingredients constantly to prevent sticking and ensure even cooking.

Adjust the amounts of soy sauce, brown sugar, or even a sprinkle of red pepper flakes to suit your personal taste preferences and balance the sweet, savory, and tangy notes.
