Healthy Zucchini Tomato Italian Sausage Soup is a comforting, nutrient-packed dish brimming with fresh vegetables, savory Italian sausage, and a medley of herbs and spices.


Ingredients

  • 2 tablespoon olive oil
  • 1 pound Italian sweet sausage
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 cup diced red bell pepper
  • 4 cloves minced garlic
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoon tomato paste
  • 4 cup diced fresh plum tomatoes
  • 2 cup diced zucchini
  • 4 cup vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Parmesan rinds (optional)
  • 1/4 cup fresh basil
  • 1 tablespoon fresh oregano

Instructions

1. Heat olive oil in a large soup pot over medium-high heat. Add Italian sausage and brown it.

2. Add diced onion, celery, carrots, and red bell pepper. Sauté for about 4 minutes until softened.

3. Create a well in the center, add minced garlic, red pepper flakes, and tomato paste. Cook for 2 minutes.

4. Stir in diced plum tomatoes, zucchini, salt, pepper, vegetable broth, Parmesan cheese and rinds, basil, and oregano. Simmer for 10-15 minutes until vegetables are tender.

5. Remove Parmesan rinds if used and ladle into bowls. Garnish with extra grated Parmesan and fresh basil.

Notes

For added nutrition, consider adding spinach or kale towards the end of cooking.

You can use plant-based sausage or ground turkey for a leaner protein option.
