Hearty and Comforting Hobo Casserole with Ground Beef

- 1 lb lean ground beef
- 1/2 cup yellow onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 2–3 medium Russet potatoes, peeled and thinly sliced
- 1 can (10.75 ounce) condensed cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- 1/2 cup French fried onions (for topping)
- Sliced green onions or chopped parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F and lightly grease a 9×13-inch casserole dish.
- In a large skillet, cook the ground beef over medium heat for 7-10 minutes, breaking it up with a spatula until browned. Drain any excess grease, then add the diced onion, diced bell pepper, and minced garlic. Sauté for about 5 minutes, until the vegetables are soft and fragrant.
- In a separate bowl, whisk together the cream of mushroom soup and sour cream until smooth. Season the mixture with salt and pepper to taste.
- Arrange half of the thinly sliced potatoes in the bottom of the prepared baking dish, seasoning them lightly with salt and pepper. Spoon the cooked ground beef and vegetable mixture evenly over the potato layer. If needed, add the remaining potato slices on top.
- Pour the creamy mushroom sauce over the potatoes and beef, using a spatula to spread it out evenly. Sprinkle the shredded cheddar cheese over the top of the casserole.
- Cover the dish tightly with aluminum foil and bake for 30-35 minutes, or until the potatoes are tender. Remove the foil, then sprinkle the French fried onions over the top of the casserole.
- Return the uncovered casserole to the oven and bake for an additional 5 minutes, or until the onions are golden brown and crispy.
- Allow the Hobo Casserole with Ground Beef to cool for a few minutes before serving. Garnish with sliced green onions or chopped parsley, if desired.
Notes
This casserole reheats beautifully. Store any leftovers in an airtight container in the refrigerator for up to 4 days.
