Homemade roast potatoes are a crispy and flavorful side dish perfect for any meal.


Ingredients

  • 2 pound potatoes, peeled and cut into quarters
  • 4 tablespoon olive oil or goose fat
  • 1 teaspoon sea salt, plus extra for serving
  • 1/4 teaspoon black pepper
  • 2 teaspoon plain flour
  • 5 garlic cloves, unpeeled and smashed
  • 5 sprigs fresh thyme or rosemary
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F. Place a large roasting pan in the oven to heat up.
  2. Peel the potatoes and cut them into quarters. Place them in a large pot and cover with cold salted water.
  3. Bring the pot to a boil and cook the potatoes for 10-15 minutes, until the edges just start to soften but the centers are still firm. Drain the potatoes in a colander.
  4. Allow the potatoes to steam dry for 2 minutes, then gently shake the colander to rough up the edges of the potatoes. Sprinkle the flour over the potatoes and shake again to coat them evenly.
  5. Add the olive oil or goose fat to the hot roasting pan in the oven and let it heat for 2-3 minutes until very hot. Carefully add the potatoes to the hot oil. Toss to coat them completely. Add the smashed garlic cloves and herb sprigs. Season with salt and pepper and spread the potatoes in a single layer.
  6. Roast the potatoes for 30 minutes, then remove the pan from the oven and toss the potatoes. Return to the oven and roast for another 25-35 minutes, until they’re deeply golden and crispy.
  7. Sprinkle the roasted potatoes with extra sea salt and fresh parsley, if desired. Serve immediately for maximum crunch and flavor.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 4 days. Reheat in a 400°F oven for 10-15 minutes to regain crispiness.
