4 large Russet & Yukon Gold potatoes, peeled & chopped

6 slices thick-cut bacon

3 tbsp honey

2 tbsp olive oil

3 cloves garlic, minced

1 tsp salt

½ tsp black pepper

½ tsp onion powder

2 tbsp fresh parsley, chopped
Instructions

Cook Bacon: Preheat oven to 400°F (200°C). Cook bacon until crispy, then chop into pieces. Reserve bacon grease.

Season Potatoes: In a bowl, toss potatoes with olive oil, reserved bacon grease, garlic, salt, pepper, and onion powder.

Roast: Spread potatoes on a baking sheet. Roast for 30-35 minutes, stirring halfway.
