Ingredients
1 lb ground chicken
1 egg
1 cup breadcrumbs (seasoned or gluten-free)
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1/2 tsp pepper
1/4 cup chopped parsley
1/2 cup honey
1/4 cup low-sodium soy sauce
3 cloves minced garlic
1 tbsp cornstarch
2 tbsp water
Instructions
1. In a large bowl, mix together ground chicken, egg, breadcrumbs, onion powder, garlic powder, salt, pepper, and chopped parsley. Combine until well incorporated, being careful not to overmix. Form the mixture into uniform, bite-sized meatballs.
2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the meatballs on the sheet, spaced apart. Bake for 18-20 minutes, or until cooked through and lightly browned.
3. In a small saucepan, combine honey, soy sauce, and minced garlic. Simmer over medium heat, stirring occasionally. In a small bowl, whisk together cornstarch and water to create a slurry; slowly add this to the simmering glaze until desired thickness is achieved.
4. Once the meatballs are baked, transfer them to a bowl and pour the honey garlic glaze over them. Toss gently to coat each meatball evenly.
