Instructions
- Marinate the chicken in honey, lime juice, lime zest, olive oil, garlic, chili powder, cumin, paprika, salt, and pepper for at least 15-30 minutes in the fridge.
- Heat a skillet over medium-high heat and sear the marinated chicken for 2-3 minutes undisturbed to develop a caramelized crust.
- Flip the chicken and continue cooking for 6-8 minutes more until the internal temperature reaches 165°F.
- Fluff the cooked rice with a fork and stir in lime juice and chopped cilantro.
- Mash the ripe avocados with lime juice, salt, and pepper until smooth but still textured.
- Assemble the stack by layering rice, then avocado mixture, and topping with the seared chicken.
