  • 12 ripe avocados, mashed
  • Juice of 1/2 lime
  • Salt and pepper, to taste
  • Lime wedges
  • Extra cilantro
  • Cherry tomatoes, sliced (optional)

Instructions

  1. Marinate the chicken in honey, lime juice, lime zest, olive oil, garlic, chili powder, cumin, paprika, salt, and pepper for at least 15-30 minutes in the fridge.
  2. Heat a skillet over medium-high heat and sear the marinated chicken for 2-3 minutes undisturbed to develop a caramelized crust.
  3. Flip the chicken and continue cooking for 6-8 minutes more until the internal temperature reaches 165°F.
  4. Fluff the cooked rice with a fork and stir in lime juice and chopped cilantro.
  5. Mash the ripe avocados with lime juice, salt, and pepper until smooth but still textured.
  6. Assemble the stack by layering rice, then avocado mixture, and topping with the seared chicken.
