Description

Keto Chicken Bacon Ranch Casserole: A Creamy, Low-Carb Comfort Meal

Ingredients

Scale
  • 2 tablespoon olive oil
  • 2 pound chicken breasts, cubed
  • 4 cup broccoli florets
  • 8 ounce bacon, crumbled
  • 8 ounce cheddar cheese, shredded
  • 8 ounce mozzarella cheese, shredded
  • 8 ounce cream cheese
  • 1 packet ranch seasoning

Instructions

1. Preheat the Oven: Set your oven to 375°F and grease a 9×13-inch casserole dish to ensure the casserole doesn’t stick.

2. Cook the Chicken: In a skillet over medium-high heat, sauté the cubed chicken in olive oil until it’s fully cooked, about 10 minutes. Remove the chicken from the heat and set it aside.

3. Steam the Broccoli: Place the broccoli florets in a microwave-safe bowl with 1 cup of water, cover with a damp paper towel, and microwave on high for 3 minutes until tender. Drain the broccoli and pat it dry.

4. Assemble the Casserole: In the prepared casserole dish, layer half of the cooked chicken and half of the steamed broccoli. Dot the top with half of the cream cheese mixture. Repeat the layers with the remaining chicken, broccoli, and cream cheese.

5. Add the Toppings: Sprinkle the crumbled bacon over the top, then add the shredded cheddar and mozzarella cheeses.

6. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

7. Serve: Allow the casserole to cool for a few minutes before serving. Enjoy your delicious and keto-friendly comfort meal!

Notes

The casserole can be modified with alternative proteins like ground turkey or beef, and low-carb vegetables like cauliflower or zucchini can be used instead of broccoli.
