Ingredients
- 1–2 tablespoons olive oil (or your preferred oil)
- 1 pound ground beef
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) tomato sauce or tomato puree
- 3 ounces tomato paste (equivalent to ¼ cup)
- 4 cups chicken broth
- 1–2 cups water (as needed for desired consistency)
- 1 tablespoon Italian seasoning
- 1 teaspoon sea salt (or to taste)
- Black pepper (to taste)
- 8 ounces bowtie pasta (uncooked, see note)
Suggested Toppings (optional, measure to taste):
- ½ cup ricotta cheese
- 2 ounces shredded mozzarella cheese (about ½ cup)
- ¼ cup Parmesan cheese (shaved, shredded, or freshly grated)
- ¼ cup fresh parsley (chopped)

Heat the Oil:
In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces with a spoon. Drain any excess fat if necessary. -
Sauté the Vegetables:
Add diced onion and minced garlic to the pot. Cook for 2-3 minutes until softened and fragrant. -
Add the Tomatoes and Broth:
Stir in the diced tomatoes (with juices), tomato sauce, and tomato paste. Mix everything well. Then add chicken broth and bring the mixture to a simmer. -
Season the Soup:
Add Italian seasoning, sea salt, and black pepper to taste. Stir to combine and let the soup simmer for 10-15 minutes to allow the flavors to meld. -
Cook the Pasta:
Add uncooked bowtie pasta to the soup. Depending on your desired soup consistency, add 1-2 cups of water. Stir and continue simmering for about 8-10 minutes, or until the pasta is tender. -
Assemble and Serve:
Once the soup is ready, ladle it into bowls. Top each serving with a generous scoop of ricotta cheese, shredded mozzarella, Parmesan, and freshly chopped parsley.
Notes
- Pasta Tip: You can substitute bowtie pasta with any other pasta shape you prefer. Just make sure to adjust the cooking time accordingly.
- For a thicker soup: Add less water and let the soup simmer longer to reduce it to your preferred consistency.
- For extra richness: Feel free to add a bit of cream or half-and-half at the end to create a creamier soup.
