  • 3 ounces tomato paste (equivalent to ¼ cup)
  • 4 cups chicken broth
  • 12 cups water (as needed for desired consistency)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt (or to taste)
  • Black pepper (to taste)
  • 8 ounces bowtie pasta (uncooked, see note)

Suggested Toppings (optional, measure to taste):

  • ½ cup ricotta cheese
  • 2 ounces shredded mozzarella cheese (about ½ cup)
  • ¼ cup Parmesan cheese (shaved, shredded, or freshly grated)
  • ¼ cup fresh parsley (chopped)

Instructions

  1. Heat the Oil:
    In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces with a spoon. Drain any excess fat if necessary.

  2. Sauté the Vegetables:
    Add diced onion and minced garlic to the pot. Cook for 2-3 minutes until softened and fragrant.

  3. Add the Tomatoes and Broth:
    Stir in the diced tomatoes (with juices), tomato sauce, and tomato paste. Mix everything well. Then add chicken broth and bring the mixture to a simmer.

  4. Season the Soup:
    Add Italian seasoning, sea salt, and black pepper to taste. Stir to combine and let the soup simmer for 10-15 minutes to allow the flavors to meld.

  5. Cook the Pasta:
    Add uncooked bowtie pasta to the soup. Depending on your desired soup consistency, add 1-2 cups of water. Stir and continue simmering for about 8-10 minutes, or until the pasta is tender.

  6. Assemble and Serve:
    Once the soup is ready, ladle it into bowls. Top each serving with a generous scoop of ricotta cheese, shredded mozzarella, Parmesan, and freshly chopped parsley.

Notes

  • Pasta Tip: You can substitute bowtie pasta with any other pasta shape you prefer. Just make sure to adjust the cooking time accordingly.
