Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or oil.
- In a large mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, grated Parmesan, chives (if using), garlic powder, salt, and pepper. Stir well.
- Add the beaten eggs and breadcrumbs, mixing until everything is evenly incorporated.
