Ingredients
- 4 large Russet potatoes
- 2 cup cooked pulled pork
- 1 cup shredded cheddar cheese
- 1/2 cup BBQ sauce
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup bacon bits
- 1 tablespoon olive oil
- 1 teaspoon salt
Instructions
1. Preheat the oven to 400°F.
2. Scrub the Russet potatoes clean, pat them dry, and pierce each one several times with a fork.
3. Rub each potato with olive oil and sprinkle with salt.
4. Bake the potatoes for 50-60 minutes, or until a knife can easily pierce through the center.
5. Reheat the pulled pork in a skillet with a splash of water or additional BBQ sauce.
6. Slice the baked potatoes open lengthwise and fluff the interior with a fork. Add pulled pork on top.
7. Sprinkle shredded cheddar cheese over the pulled pork and let it melt. Top with sour cream, green onions, and bacon bits.
8. Serve hot with additional BBQ sauce on the side.
Notes
For a healthier version, use reduced-fat cheese and Greek yogurt instead of sour cream.
