Ingredients
4 large russet potatoes
6 slices of cooked bacon, crumbled
1 cup of shredded cheddar cheese
4 eggs
2 green onions, sliced
Salt and pepper to taste
Instructions
1. Preheat your oven to 400°F (200°C).
2. Bake the potatoes until tender.
3. Slice potatoes in half and scoop out some flesh to create a sturdy “boat.”
4. Fill with cheddar cheese and crumbled bacon.
5. Crack one egg into each potato skin.
6. Place on baking sheet and bake 10–15 min until eggs are set and cheese is melted.
7. Sprinkle with green onions and season with salt and pepper.
