Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake is a comforting, cheesy pasta bake that’s packed with flavor, combining ground beef, sweet corn, bell peppers, and a creamy ranch-infused cheese sauce, all tossed with rotini pasta and baked to perfection.


Ingredients

  • 12 ounce rotini pasta
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 cup sweet corn kernels
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1/2 onion, diced
  • 1 ounce ranch seasoning mix
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup milk
  • 2 cup shredded cheddar cheese, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat oven to 375°F.
  2. Bring a large pot of salted water to a boil. Cook rotini pasta according to package directions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up as it cooks, about 5 to 7 minutes. Drain excess fat and season with garlic powder, onion powder, salt, and pepper. Stir in the ranch seasoning mix and set aside.
  4. In the same skillet, add diced onion, green bell pepper, and red bell pepper. Cook for 3 to 4 minutes until softened.
  5. In a separate saucepan, combine cream cheese, sour cream, and milk over medium heat. Stir until cream cheese is fully melted and mixture is smooth. Add 1 cup of shredded cheddar cheese and continue stirring until melted and creamy. Season with salt and pepper to taste.
  6. In a large mixing bowl, combine cooked rotini pasta, beef mixture, sweet corn, sautéed vegetables, and cheese sauce. Stir until everything is well combined. Transfer to a greased 9×13 inch baking dish and spread evenly.
  7. Sprinkle remaining 1 cup of shredded cheddar cheese evenly over the top. Bake for 20 to 25 minutes until the top is golden and bubbly.
  8. Remove from oven and let cool for 5 minutes. Garnish with fresh chopped parsley before serving.

Notes

For a gluten-free version, substitute the rotini pasta with a gluten-free alternative.

Consider dicing up a jalapeño or using pepper jack cheese instead of cheddar for added heat.
