8 oz elbow macaroni

1 lb ribeye or sirloin steak, thinly sliced

1 tablespoon olive oil

1 bell pepper, diced

1 onion, diced

2 tablespoons butter

2 tablespoons flour

2 cups milk

1 cup provolone cheese, shredded

1 cup cheddar cheese, shredded

Salt and pepper to taste


Instructions

1. Boil the elbow macaroni according to package instructions in salted water. Drain and set aside.

2. In a large skillet, heat olive oil over medium-high heat. Add the sliced beef, bell pepper, and onion. Sauté until the beef is browned and vegetables are tender, about 8–10 minutes. Remove from heat and set aside.

3. In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes to form a roux.

4. Slowly pour in the milk while whisking continuously to avoid lumps. Bring the mixture to a simmer and let it thicken for about 5 minutes.

5. Remove the skillet from heat and stir in the provolone and cheddar cheese until the sauce is smooth and creamy.

6. Add the cooked macaroni and the beef-vegetable mixture to the cheese sauce. Stir until everything is well combined and evenly coated.

7. Serve hot, garnished with extra cheese if desired.

Notes
