  • 8 slices bacon, cooked and crumbled

  • 4 large eggs
  • 1 cup shredded cheddar cheese

Instructions

  • Cook the Potatoes: In a large skillet, heat a drizzle of oil over medium heat. Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until golden and crispy.
  • Sauté the Bacon and Veggies: Add the chopped onion and minced garlic to the skillet with the potatoes. Cook for 2-3 minutes until the onion is softened. Add the crumbled bacon, paprika, salt, and black pepper, and stir everything together.
  • Make the Eggs: Create four small wells in the mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
  • Add the Cheese: Sprinkle the shredded cheddar cheese over the potatoes and eggs. Cover again for 1-2 minutes until the cheese is melted and bubbly.
